So a couple nights ago for dinner i made one of my husbands favorite meals....SAUSAGE! And ironically, my cat's new favorite meal too, lol. I discovered something new that i do to the sausage, i cut it lengthwise down the middle, but not all the down, and almost butterfly it. When i make it, it reminds me of being out at a fair in the summer, all I'm missing is some funnel cake or pizza frita, like my Nanny always made.
Sausage Peppers and Spinach.
- 1 pound of sweet or hot sausage
- 2 bell peppers (any color)
- 1 onion
- frozen chopped spinach (or fresh)
- 5 cloves of garlic
- salt and pepper
Pan fry your sausage with just a little bit of oil in the pan. Make sure the pan is nice and hot, so the pan gets a nice crust on the meat. After a few minutes, lower the heat, and cook for approximately 15 minutes. Then put the peppers and onions (i forgot the onions) in the pan on top of the sausage and let cook all together in the same pan.
Cover and let cook until the peppers get soft.
Season with some more salt and pepper. If the pan's too hot , you can add a little bit of water to slow down the cooking, you don't want to burn your food. You just want the flavors to come together and
blend.
Spinach w/ garlic and oil
Put bag of Spinach in big pot of water and swish around until clean. Make sure all dirt comes off the leaves, even if the bag says triple washed, still was you produce. Then par-boil your Spinach for 2 minutes. Then right from the pot take a slotted spoon and saute it with 5 cloves of garlic and oil in a saute pan. It may look like a lot of Spinach, but it wilts down. Add some salt and pepper until perfectly seasoned, and your done. Spinach is so healthy for you, it's low in calories but high in vitamins and nutrients. It's also supposed to be good for your brain, and Popeye always ate his spinach, so in the words of Popeye
"I'm strong to the finish, Because i eat my spinach, I'm Popeye The Sailor Man!!"
